Dorito Casserole

Need something quick? Filling? A one-pot meal? Here it is – Perfect for a Lazy Sunday evening!

It may not be the healthiest choice but it wasn’t so bad either. I took inspiration from this recipe (wonderful blog!) and added my own twist. Instead of plain chicken I used cheesy baked Mexican chicken, made an assembly line of Lactaid (Since Leia cannot have regular milk), panko crumbs + Bread Crumbs + taco seasoning + Mexican Cheese mix + a dash of salt and pepper, dip your chicken pieces in milk, roll them in the crumb mixture and put them in the oven (400 degrees-20 minutes till done).

Chop chicken into bite sized pieces (Leia had the chicken and ketchup for dinner with Doritos, veggies, fruit and rice), add to a big bowl. Combine 1/2 jar of Salsa, 1/2 cup of sour cream (or Greek yogurt), 1 cup Mexican cheese blend, taco seasoning, a can of cream of chicken soup, salt and pepper.

In a casserole dish lay a layer of Doritos, add the chicken mixture, a layer of Doritos top with chicken mixture and then final layer of Doritos, sprinkle cheese and bake at 350 for about 25 minutes. Take out of the oven and let it sit for a few minutes. Before serving add a big handful of shredded lettuce, chopped tomatoes, and half a can of seasoned black beans.

I’m such a spaz I forgot to take a picture of the finished dish – but borrowed one from Pinterest. Try this if you haven’t already – you will love it!

Verdict: Makes a lot – at least 7-8 servings. LOVED by all!
